After leaving her hometown of Freetown, Virginia,
(founded by her emancipated grandfather), Edna
Lewis set out for New York City. Eventually she
opened Caf�icholson in Manhattan, cooked
for the stars and became a local legend. She is
the award-winning author of three cookbooks,
ensuring that traditional Southern foods and
preparations will live on.

SPOTLIGHT: ABBY FISHER, AUTHOR
Born a slave in North Carolina, Abby Fisher
achieved success after she was granted her
freedom. Her book, What Mrs. Fisher Knows
about Old Southern Cooking: Soups, Pickles,
Preserves, Etc., published in 1881, is the first
known African American cookbook and includes
her award-winning recipes. She is thought to be
the first to introduce the country to fried chicken
using flour, fat, and a finishing of thin gravy.

SPOTLIGHT: RUFUS ESTES, CHEF
Author of the first cookbook written by an African-
American chef (Rufus Estes' Good Things to Eat),
Rufus Estes started his life a slave, but died a free
man. After years of working in restaurants and
private car services, he found himself catering
to presidents Benjamin Harrison and Grover
Cleveland, among other dignitaries.
In 1911, he self-published a book containing 600
of his recipes�the earliest known cookbook by a
black railway chef.
