Sci. of the USSR, 211,loscoW. tt *SlgniT~icance of Proteus in the causation of tox4c food i poisoning (Russian text) BOOK (Moscow) 1956 (50 pages) Tables 3 The author studied the multiplication of different strains of B. proteus on individual foodstuffs, noting the changes produced in them, and also the proteolytic and pop- tolytic properties of the strains. The rate of growth of different litrains of B. r p 0- teus at 25' C. on sterile media and on foodstuffs which had been subjected to tho rough thermal treatment (milk, mashed potato, minced fish, minced meat, liver sausage, crab) was practically the same in all cases. Abundant grov.-tli of B. pro- teus vulgaris in the nutrient media and in the foodstuffs did not Inoduce changes detectable by the senses in them, in 2 or 3 days. Study of 6 strains of proteus on a synthetic medium with added casein both in pure culture and in mixtures with other bacteria of the putrefactive group (Bac. mycoides, Bac. mesenterIcus, Bac. mqga- :.I therium, Bac. putrificus) showed that not one of these organisms in pure culture !I produced putrefactive decomposition in casein medium. Putrefactive decomposi- tion was noted only when these organisms were inoculated simultzaneously with B. H proteus or when B. proteus was added to developed cultures of the putrefactive organisms. Inoculation of B. proteus into a casein medium previously treated with it enzymes (pepsin or trypsin) led to the rapid appearance of signs of putrefactive decomposition. By these results the author explains the absence of changes de- it tectable by the senses in foodstuffs and prepared food Infected with proteus alter preparation. B. proteus does not cause much decomposition of proteins which have 1! neither been treated with enzymes nor inoculated with other organisms, aince 1i B. proteus breaks down mainly polypeptides.
