Utle I Proteolytic fermentation In the process of cooling winter
wheat grain
Nriodical t Dok. AN SSSR 99/6, lo65_io67, Dec 21, 1954
Abstract I Experiments were conducted to determine the change in
activity and quality
of autolytic proteolysis of winter wheat. In addition the authors
investi-
gated the activity and quality of proteolytie fermentation not only
in the
whole grain but also in the seed end endosperm. Results indicate that
cool-
Ing Increases the quality of Crain fermentation and nzkzes it
possible for
the seeds to adopt themselves to possible temperature fluctuations-
and does
not veanken the nitrogen exchanGe processes even at very-low
temperatures.

ABSTRACT:
This enzyme of plant origin has
hitherto only been produced of
the milky juice of plants; of seeds, however,
only proteolyti-
cally active extracts are known. The author succeded in
producing
very active orystalline preparations of the seeds mentioned in
the
title. The method of Kimmel and Smit (Smith, reference 1)
proved to be
inapplicable to the proteinases of seeds. The.-author
obtained positive
results by increasing the ionic strength and
by introducing a fractionated
saltint-out of the solutions. The
method is described. The uotivity of the
preparation was tested
by the influence upon casein and upon
benzoyl-arginine-amide
(the latter preparation having been synthesized by L.
V. Ulen-
kova). By the influence upon a 1~f caoein solution in phosphate-

in 21 hours. By the influence upon benzoyl-arainine-amide 0,3522
g in lo ml of o,2 M phosphate-buffer PH 7,0 were dissolved.
Benzoyl-arginine-amide was entirely decomposed within 6o minutes.
In order to obtain a purer crystalline proteinase-preparation,
it was liberated of concomitant proteins by meazis of autolysis.
The activity of the precipitation deposited the next day was
much hiCher than that of the first preparation. Ye. G. Aleksan-
drova helped in the work. There are 1 fi,-ure and 1 reference.
